Ingredients
  

  • To whip up this delightful eggless apple pie gather the following ingredients:

For the pie crust

  • - 1 cup 120 grams whole wheat flour
  • - ½ cup 62.5 grams all-purpose flour
  • - ¼ cup olive oil or sunflower oil
  • - ⅓ cup water at room temperature (add as needed)
  • - ½ teaspoon salt or to taste
  • - 1 teaspoon vanilla extract for added flavor

For the apple pie filling

  • - 2 medium-sized apples peeled, cored, and sliced
  • - ¼ teaspoon ground cinnamon
  • - ¼ teaspoon ground nutmeg freshly grated is best if available
  • - 2 tablespoons whole wheat flour
  • - 2 tablespoons demerara sugar or brown sugar, raw sugar, or white sugar
  • - 1 tablespoon lemon juice adds brightness
  • - 1 to 2 teaspoons oil or vegan butter to top the filling

Other Ingredients

  • - 1 to 2 pinches ground cinnamon for sprinkling on top
  • - 1 to 2 pinches raw sugar or your choice of sugar for a sweet touch on the crust
  • - 2 to 3 teaspoons soy milk or any nut milk for glazing

Instructions
 

Step 1: Prepare the Pie Crust

  • Start by separating the dry ingredients. Sift together the whole wheat and all-purpose flours with the salt in a large mixing bowl. Next, add the olive oil. Using your fingertips, mix the oil into the flour until the mixture resembles breadcrumbs. This step is crucial as it contributes to the flakiness of your crust.

Step 2: Combine & Form the Dough

  • Gradually add the water to the flour mixture, a little at a time, mixing gently until everything comes together. Don’t knead it; just gather the dough into a ball and wrap it in plastic wrap. Let it chill in the fridge for about 30 minutes.

Step 3: Make the Apple Filling

  • While the dough is chilling, peel, core, and slice the apples into thin wedges. In a separate bowl, toss the apple slices with cinnamon, nutmeg, whole wheat flour, demerara sugar, and lemon juice. Make sure the apples are well-coated so that every bite is flavorful.

Step 4: Preheat Your Oven

  • Set your oven to preheat at 180 degrees Celsius (or 356 degrees Fahrenheit) for 15 minutes. This way, when your pie is assembled, the oven is good to go!

Step 5: Roll out the Dough

  • After chilling, divide the dough into two equal parts. On a floured surface, roll each portion to about ¼ inch thickness. Use one piece for the bottom of the pie.

Step 6: Assemble the Pie

  • Carefully lay the rolled dough in a greased pie dish and gently press it into the bottom and sides of the pan. Fill with the apple mixture, arranging it evenly. Sprinkle a light touch of olive oil or vegan butter on top of the filling for moisture.

Step 7: Add the Top Crust

  • Roll out the second dough piece and lay it carefully over the apple mixture. Crimp the edges to seal the pie, folding the top crust edge under the bottom crust. You can make it fancy by fluting the edges! Cut small slits in the top crust to let steam escape during baking.

Step 8: Provide a Tasty Glaze

  • Brush the top with a little soy milk or nut milk for shine and finish with a sprinkle of raw sugar and ground cinnamon.

Step 9: Bake

  • Place the pie in the preheated oven and bake for 50-60 minutes, or until the crust is golden brown and crisp. Keep an eye on it; if the edges darken too quickly, cover them with foil to prevent burning.

Step 10: Cool & Serve

  • Remove the pie from the oven and let it cool slightly. It can be served warm or at room temperature, but honestly, I prefer it warm with a scoop of ice cream!

- Slice Uniformly: Keeping your apple slices similar in size ensures even cooking. No one likes a squishy bottom or overly crunchy top!
- Chill Your Dough: Resting your dough helps develop the flavors and improves texture—don’t skip this step.
- Play with Spices: If you're feeling adventurous, add some ground ginger or allspice to the apple filling for an extra kick.
