  • - 2 teaspoons dried thyme
  • - ½ teaspoon salt
  • - ¼ teaspoon black pepper

Step 1: Prepare the Beets

  • If you have a food processor with a grater attachment, that’ll make this part a breeze! Otherwise, grab a hand grater and get those beets shredded until they resemble bright, colorful confetti. Place the grated beets in a bowl for later.

Step 2: Combine Ingredients

  • Now, gather all your ingredients. Toss the grated beets into the food processor along with the onions, garlic, lentils, oats, flour, peanut butter, thyme, salt, and pepper. If you’re using smoked paprika and soy sauce, this is the time to add those too. Pulse the mixture together until everything is well combined. Don’t worry if it looks a little rough around the edges; a little texture provides great character!

Step 3: Form the Patties

  • This mixture is sticky, which is part of its charm. Wipe your hands a bit – I find that wetting them helps prevent the mixture from clinging too much. Shape the mixture into four patties, ensuring they are compact but not overworked.

Step 4: Choose Your Cooking Method

    Frying:

    • Heat a generous amount of oil in a large skillet over medium heat. When the oil is shimmering, gently add the patties. Cook them low and slow for about 3 to 5 minutes per side until they are beautifully browned and hold their shape. The key is not to rush this step!

    Baking:

    • For a healthier option, preheat your oven to 350°F (180°C). Lightly grease a baking sheet or line it with parchment paper. Arrange the patties in a single layer, leaving space around each. Bake for 30 to 35 minutes, flipping halfway through, until they are firm and just starting to brown.

    Air Frying:

    • Preheat your air fryer to 325°F (170°C). Lightly grease the basket, place the patties in a single layer, and air fry for about 15 to 25 minutes, flipping once. They should be firm and have a lovely color on both sides when done.
