  • 1/2 cup crispy Panko breadcrumbs
  • 1/2 tsp ground cumin
  • 1 tsp lemon zest

Step 1: Prepare the Shrimp

  • Start by finely chopping the shrimp. You can do this with a knife or pulse in a food processor until they’re roughly minced. Don’t blend too much; you want some texture. Place the minced shrimp in a bowl.

Step 2: Combine Ingredients

  • To the bowl of shrimp, add the minced garlic, chopped cilantro, lemon zest, sea salt, smoked paprika, ground cumin, garlic powder, and cayenne. Mix everything well until the shrimp is coated evenly with the seasonings.

Step 3: Bind the Mixture

  • In a separate bowl, beat the egg lightly, then add it to the shrimp mixture. Stir until the egg is well incorporated, helping to bind the patties together.

Step 4: Add Breadcrumbs

  • Gently fold in the crispy Panko breadcrumbs. This will provide that satisfying crunch we love. Adjust the amount of breadcrumbs if needed; the mixture should be moist but hold its shape when formed into patties.

Step 5: Form the Patties

  • Using your hands, form the shrimp mixture into burger-sized patties. Aim for about ½ inch thick to ensure they cook evenly. Place the patties on a parchment-lined plate.

Step 6: Heat the Oil

  • Don’t Overmix: When combining the ingredients, be gentle. Overmixing can lead to dense patties.
  • Chill the Patties: If time allows, chill the formed patties in the refrigerator for 30 minutes. This helps them hold their shape better during cooking.
  • Monitor Oil Temperature: Too hot, and they’ll burn; too cool, and they’ll soak up too much oil. Medium heat is key!
  • Experiment with Spices: Don’t hesitate to adjust the spices. If you love a bit more heat, add an extra pinch of cayenne or use chili powder.
