Ingredients
  

  • 8 medium Idaho potatoes peeled and cut into quarters
  • 2 medium onions cut into quarters
  • ½ cup canola oil
  • 5 large eggs beaten
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • tablespoons granulated sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Garnish: finely chopped scallions

Instructions
 

  • Preheat your oven to 375°F (190°C). This temperature will give your kugel that perfect crispy exterior.
  • In a food processor, combine the potatoes and onions. Pulse until they are finely shredded but not puree-like. You want them to hold some texture. If you don’t have a food processor, a box grater works just fine – though it may take a little longer!
  • In a large mixing bowl, combine the shredded potatoes and onions. To this mixture, add the beaten eggs, canola oil, salt, pepper, sugar, garlic powder, and smoked paprika. Stir until completely combined. Ensure every shred of potato and onion is thoroughly coated.
  • Grease a 9x13-inch baking dish with a bit of oil. Pour the mixture into the dish. Using a spatula, spread it evenly.
  • Place the dish in the oven and bake for about 1 hour to 1 hour and 15 minutes, or until the top is golden brown and crispy. Enjoy that aroma filling your kitchen!
  • Let it cool for about 10 minutes before slicing. Garnish with finely chopped scallions for a burst of freshness.
