Equipment

  • Slow Cooker

Ingredients

  • 1 cup low-sodium chicken stock
  • 2.67 lbs skinless boneless chicken breasts
  • 8 oz jarred pepperoncinis with brine
  • 1 tsp garlic powder optional
  • 2 tbsp Italian herb blend

Instructions

Step 1: Prepare Your Ingredients

  • Start by gathering your ingredients. It’s a straight-shooting operation, folks! Grab your chicken, stock, and pepperoncinis. Take a moment to look at the chicken; should it look pale or moisture-laden, rinse it under cold water.

Step 2: Setup the Slow Cooker

  • Put your slow cooker on a flat surface; it’s time for business. Pour the chicken stock into the bottom of the slow cooker. This liquid will keep the chicken moist as it cooks.

Step 3: Add Chicken Breasts

  • Next, add the chicken breasts directly on top of the stock. Lay them out nicely, and don’t worry about spacing; this dish is forgiving.

Step 4: Add the Peppers

  • Open your jar of pepperoncinis—or if you’ve got a bit of a wild spirit, go ahead and slice some fresh ones! Pour the contents, including the brine, over the chicken. This adds so much flavor, so don’t be shy.

Step 5: Season

  • Here’s where the magic really ramps up. Sprinkle the garlic powder and Italian herb blend over the chicken. If you’re unsure about the garlic, it adds depth, but feel free to skip it if you're not a fan.

Step 6: Cook It Low and Slow

  • Set your slow cooker to low for about 6-8 hours. The aroma will begin wafting through the house, teasing everyone around you.

Step 7: Shred the Chicken

  • Once it’s time to dive in, pull out those falling-apart chicken breasts. Shred them using two forks; this should be easy given how tender they’ll be. Return the shredded chicken to the sauce for a mix that’ll have everyone clamoring for more.

Notes

  1. Choose Quality Ingredients: Select good-quality chicken breasts and locally sourced pepproncini if possible. Quality matters in flavor.
  2. Don’t Skip the Brine: The brine from the pepperoncinis is key for flavor. Allow it to mix in well as you cook.
  3. Adjust Cooking Time: Depending on your slow cooker model, adjust cooking times. Some cook hotter than others. Look for the chicken to shred easily for doneness.
  4. Customize Your Heat Level: If you enjoy a kick, add more pepperoncinis or use their liquid. For milder flavors, cut down on the peppers.
  5. Serve It Again, and Again: This dish reheats wonderfully. Make plenty for leftovers—it only gets better!
