  • 1/2 tsp sea salt or kosher salt
  • 1 tsp fresh lemon zest
  • 2 tbsp fresh parsley finely chopped
  • 1/4 cup freshly grated parmesan cheese
  • 1/4 tsp onion powder

Step 1: Preheat the Oven

  • Start by preheating your oven to 425°F (220°C). This high temperature ensures that your wedges will get nice and crispy.

Step 2: Prep the Potatoes

  • Wash the potatoes thoroughly. There’s no need to peel them; the skin adds texture and nutrients. Cut the potatoes into wedges, aiming for a uniform size to ensure even cooking.

Step 3: Season the Potatoes

  • In a large bowl, combine the olive oil, smoked paprika, black pepper, sea salt, lemon zest, onion powder, and parsley. The oil will help the spices adhere to the potatoes and add flavor as they cook.

Step 4: Toss the Wedges

  • Add your potato wedges to the bowl. Toss everything together until the wedges are evenly coated in the oil and spices. This step is crucial for ensuring that every bite bursts with flavor.

Step 5: Arrange on a Baking Sheet

  • Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned potato wedges in a single layer, making sure not to overcrowd the pan.
  • If they’re too close together, they’ll steam rather than crisp up.

Step 6: Bake to Perfection

  • Place the baking sheet in the preheated oven. Bake the wedges for about 30-35 minutes. Halfway through, flip the wedges to ensure even browning. Keep an eye on them towards the end of the baking time; you want them golden and crispy.

Step 7: Add Cheese and Serve

  • In the last 5 minutes of baking, sprinkle the grated parmesan cheese over the wedges. Let it melt slightly before removing them from the oven. This step adds an incredible cheesy flavor.

  • Cut Evenly: Uniformly cut pieces ensure even cooking. No one likes mushy spots!
  • Soak the Potatoes: Soaking wedges in cold water for 30 minutes can help remove excess starch and enhance crispiness.
  • Use High Smoke Point Oil: Extra virgin olive oil is great, but you can also try avocado oil for a different flavor.
  • Don’t Overcrowd the Pan: Give the wedges space to breathe. Overcrowding leads to steaming, which is not what we're aiming for here.
  • Experiment with Seasonings: Feel free to customize spices—garlic powder, cayenne, or Italian herbs can give a different twist.
